  • 1 large egg For a lighter version, use egg whites or tofu scramble.
  • 1/4 cup diced onions
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons ketchup
  • 1 tablespoon mayonnaise
  • to taste salt
  • to taste pepper
For the Eggs
  • 4 large eggs Any neutral oil or butter works well for frying.
  • 1 tablespoon cooking oil

Method
 

Cooking Instructions
  1. Rinse the rice under cold water until clear, then cook with water in a rice cooker for about 20 minutes.
  2. Combine beef stock, cornstarch, onion powder, and shoyu in a saucepan over medium heat. Cook until thickened, stirring constantly.
  3. Mix ground beef, egg, onions, breadcrumbs, ketchup, mayonnaise, salt, and pepper. Form into four patties and cook in a skillet until browned.
  4. Heat oil in a non-stick frying pan. Cook eggs until whites are set, flipping for over-easy. Remove from heat.
  5. Assemble by placing rice on plates, topping with patties, pouring on gravy, and adding a fried egg on top.
