  • 2 cups cherry tomatoes ripe and juicy
  • 1 can artichoke hearts drained and chopped
  • 1 medium red onion thinly sliced
  • 1 cup black olives pitted and halved
  • 1 cup fresh basil torn by hand
  • 3 cups mixed salad greens optional
For the Dressing
  • 1/4 cup extra virgin olive oil high-quality
  • 2 tablespoons balsamic vinegar or lemon juice
  • 1 tablespoon Dijon mustard or yellow mustard
  • 1 clove garlic freshly minced

Method
 

Preparation Steps
  1. Rinse cherry tomatoes under cold water, halve them and place in a large mixing bowl. Drain and chop artichoke hearts and add them to the bowl along with sliced red onion and halved black olives.
  2. In a separate small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, and minced garlic until smooth.
  3. Season the dressing with salt and fresh ground black pepper to taste.
  4. Drizzle the dressing over the mixed ingredients in the large bowl and toss everything together.
  5. If desired, sprinkle crumbled feta cheese over the salad and gently toss again.
  6. Serve the salad over mixed greens if using.
  7. Allow the salad to rest for about 15 minutes to meld flavors before serving.
