Ingredients
  

For the Quinoa
  • 1 cup Quinoa Rinse to remove bitterness.
  • 2 cups Water Can substitute with vegetable broth.
For the Tomato Mixture
  • 1 cup Cherry Tomatoes Substitute with regular tomatoes if needed.
  • 1 tbsp Salted Butter Can use olive oil or vegan butter.
  • 1 tbsp Oil A neutral oil like canola or grapeseed.
  • 1 tsp Garlic Powder Fresh garlic can be used for stronger flavor.
  • 1 tbsp Tomato Paste Deepens tomato flavor.
For the Garnish
  • 0.5 cup Chopped Fresh Parsley Basil or dill can be used as alternatives.
  • to taste Salt & Pepper Adjust according to preference.

Method
 

Preparation Steps
  1. Rinse quinoa under cold running water in a fine mesh sieve for about 30 seconds until the water runs clear.
  2. Combine rinsed quinoa and water in a pot, bring to a boil, then reduce heat and simmer for 12 to 15 minutes.
  3. Quarter cherry tomatoes and set aside. In a skillet, heat oil and butter, then add tomatoes, garlic powder, salt and pepper.
  4. Sauté tomatoes for 5-7 minutes until they soften and release juices.
  5. Combine cooked quinoa and sautéed tomatoes in a mixing bowl, add chopped parsley, and stir until combined.
  6. Serve warm or chill for later. Store in an airtight container for up to 5 days.
