Preparation Steps
  1. Soak the Mustard Seeds: In a medium bowl, combine yellow and brown mustard seeds with enough water and apple cider vinegar to cover them. Soak for 12 to 24 hours.
  2. Prepare the Spice Blend: Mix paprika, cayenne pepper, turmeric, and salt in a separate bowl until well combined.
  3. Add Sweetener to the Spice Mix: Incorporate honey or brown sugar into the spice mixture just before combining.
  4. Cook the Mustard Mixture: Drain soaked seeds and put them in a saucepan with vinegar mixture and spice blend. Cook over medium-low heat for about 10 minutes.
  5. Blend the Mustard: Remove from heat, cool slightly, and blend the mixture until slightly coarse.
  6. Cool and Store: Let it cool to room temperature and transfer to an airtight jar. Seal and refrigerate for up to 4-6 weeks.
