- Using a knife or french fry cutter, slice the polenta into fries, about 1/2 inch thick.
- In a skillet, combine avocado oil and truffle oil; heat over medium-high heat.
- Add the polenta fries to the hot oil in batches and fry for 5-7 minutes until golden brown.
- For the air frying option, preheat to 400°F and bake for 25-30 minutes.
- Remove fries from oil or air fryer and toss with additional truffle oil and Spicy Truffle Zest.
- In a bowl, mix mayonnaise with Spicy Truffle Zest to create the mayo.
- Serve the fries with the Spicy Truffle Mayo on the side.
