Method
 

Step-by-Step Instructions
  1. Process 3 cups of fresh strawberries with granulated sugar in a food processor until smooth, then strain to collect puree.
  2. Heat the strained strawberry mixture in a saucepan over medium heat, simmering for 3-4 minutes until slightly thickened.
  3. Combine cold water with unflavored gelatin and let it bloom. Stir into the warm strawberry mixture and simmer for 2 minutes.
  4. Transfer the mixture to a heatproof bowl and refrigerate for 45-60 minutes until slightly thickened.
  5. Beat the cooled mixture with a hand mixer for 2 minutes, then gradually add the heavy cream and vanilla, mixing until fluffy.
  6. Spoon the mousse into dessert cups and refrigerate for at least 2 hours before serving.
