Step-by-Step Instructions for Savory Pumpkin Pizza
  1. Preheat your oven to 350°F (175°C); place a pizza stone in the oven if using.
  2. In a medium skillet, heat olive oil over medium-low heat. Add half of the diced onion and sauté until softened, about 5 minutes. Optionally sprinkle in sugar and cook until golden brown, about another 5-7 minutes.
  3. In a mixing bowl, combine pumpkin puree, minced garlic, diced shallot, fresh thyme, and remaining diced onions. Mix well and fold in parmesan cheese. Season with salt and pepper to taste.
  4. Prepare the pizza dough according to package instructions, shaping it into a 12-inch circle on a lightly floured surface.
  5. Transfer the dough onto the heated stone or a baking sheet. Spread the pumpkin mixture over the dough, top with caramelized onions, and sprinkle havarti cheese on top.
  6. Bake in the preheated oven according to package instructions for 10-12 minutes, or until the crust is golden and the cheese bubbles. For a crispier crust, extend baking time to 20-25 minutes.
  7. Remove from oven, allow to cool for a few minutes, then slice. Serve warm with fresh arugula on top.
