For the Sauce
  • 0.5 cup Soy Sauce Low-sodium preferred
  • 0.33 cup Vinegar (White or Cane) Avoid balsamic
  • 6 cloves Garlic Crushed
  • 2 pieces Bay Leaves
  • 10 pieces Black Peppercorns
  • 1 cup Water
Optional Ingredients
  • 2 tablespoons Sriracha or Chili For a spicy kick
  • 1 cup Coconut Milk Substitute for half the water
  • 2 cups Vegetables e.g., Potatoes or Carrots

Method
 

Cooking Steps
  1. Heat a skillet over medium-high heat, add chicken thighs, and sear for 5-7 minutes on each side until golden brown.
  2. Transfer the browned chicken to the slow cooker and layer it in.
  3. Add soy sauce, vinegar, garlic, bay leaves, black peppercorns, and water to the slow cooker.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. Optional: After cooking, preheat the broiler and broil chicken for 3-5 minutes until skin is crispy.
  6. If a thicker sauce is preferred, simmer the liquid in a saucepan on medium heat for 10 minutes.
