- In a small bowl, combine 1 1/2 tablespoons of unsalted butter and 1 1/2 tablespoons of honey, mixing until smooth and creamy. Set aside to come to room temperature.
- Preheat your oven by placing a cooling rack on a baking sheet. Spread a layer of honey butter on each slice of bread.
- Using mayonnaise, draw borders around the edges of each slice of bread to help contain the eggs.
- Crack one large room temperature egg onto the center of each slice of bread. Season with salt and pepper.
- Sprinkle 1/4 cup of diced pancetta over the eggs followed by a light sprinkle of shredded Parmigiano cheese.
- Place the baking sheet in a cold oven. Broil at 550°F for 4 to 5 minutes.
- Turn off the broiler and leave the oven door slightly ajar for an additional 2 to 3 minutes.
- Remove the baking sheet from the oven, sprinkle additional Parmigiano cheese, and serve hot.
