  • 1.5 tbsp Unsalted Butter adds richness and moisture; substitute with honey butter for added sweetness
  • 4 slices Sandwich Bread any thick-cut bread works well
For the Egg Mixture
  • 4 large Eggs room temperature
  • Salt to taste
  • Pepper to taste
For the Savory Finish
  • 0.25 cup Pancetta cooked or uncooked; can substitute with bacon or prosciutto
  • Mayonnaise in a tube or jar
  • Shredded Parmigiano Cheese use sparingly before broiling and more afterwards
Optional Sweetness
  • 1.5 tbsp Honey can be omitted or replaced with regular unsalted butter

Method
 

Step-by-Step Instructions
  1. In a small bowl, combine 1 1/2 tablespoons of unsalted butter and 1 1/2 tablespoons of honey, mixing until smooth and creamy. Set aside to come to room temperature.
  2. Preheat your oven by placing a cooling rack on a baking sheet. Spread a layer of honey butter on each slice of bread.
  3. Using mayonnaise, draw borders around the edges of each slice of bread to help contain the eggs.
  4. Crack one large room temperature egg onto the center of each slice of bread. Season with salt and pepper.
  5. Sprinkle 1/4 cup of diced pancetta over the eggs followed by a light sprinkle of shredded Parmigiano cheese.
  6. Place the baking sheet in a cold oven. Broil at 550°F for 4 to 5 minutes.
  7. Turn off the broiler and leave the oven door slightly ajar for an additional 2 to 3 minutes.
  8. Remove the baking sheet from the oven, sprinkle additional Parmigiano cheese, and serve hot.
