  • 4 cups low-sodium chicken broth
Seasoning
  • 1 tbsp cayenne pepper to taste
  • 1 tbsp black pepper to taste
Optional Vegetables
  • 2 medium sweet potatoes cubed
  • 2 cups fresh spinach
  • 1 cup okra sliced
  • 1 head cauliflower cut into florets

Method
 

Preparation Steps
  1. Marinate the chicken thighs with minced garlic, grated ginger, and spices for at least 30 minutes to 1 hour.
  2. Sauté sliced onions in a pot with oil over medium heat for 3-5 minutes until translucent.
  3. Add the marinated chicken to the pot and cook for 6-8 minutes until browned.
  4. Stir in peanut butter, canned tomatoes, and chicken broth, then bring to a simmer.
  5. Reduce heat, cover, and simmer for 30-45 minutes until chicken is tender.
  6. Adjust seasoning, then add sweet potatoes, spinach, or okra, cooking for an additional 10-15 minutes.
  7. Serve hot, garnished with cilantro or crushed peanuts, preferably over jasmine rice.
