Ingredients

For the Kebab Mixture
  • 1.1 lb finely minced chicken Ensure the chicken has about 15% fat for that juicy moisture and flavor.
  • 1 teaspoon garlic paste Fresh garlic can work as a delightful substitute for a more vibrant taste.
  • ½ teaspoon fresh green chili, minced Adjust this to suit your spice preference.
  • 1 medium onion, peeled and grated Grate well to release juices.
  • 1 medium red bell pepper or long red sweet pepper, grated Adds a beautiful sweetness.
  • 1 teaspoon sweet paprika Smoked paprika is an excellent alternative.
  • 1 teaspoon red chili flakes Optional for those who crave a bit more heat.
  • ½ cup fresh parsley, finely chopped Coriander works too!
  • 1 teaspoon salt Kosher salt recommended.
  • 1 tablespoon oil for grilling Use a neutral oil to prevent sticking.

Equipment

  • Grill
  • mixing bowl
  • metal skewers
  • Grater

Method

Step-by-Step Instructions
  1. Grate the onion and red bell pepper, then squeeze out any excess juices. In a large mixing bowl, combine chicken, onion, pepper, garlic paste, minced green chili, salt, sweet paprika, red chili flakes, and chopped parsley. Knead the mixture for about 3–5 minutes until well-blended, then cover and refrigerate for at least 1 hour.
  2. Wet your hands with cold water to help shape the mixture. Divide the mixture into 4-6 equal portions and roll each into long, flattened shapes around metal skewers.
  3. Set your grill or skillet to medium-high heat, ensuring it's hot enough to avoid sticking. Lightly oil the grill grates.
  4. Cook the kebabs for approximately 5-6 minutes on each side, or until lightly browned and charred. The chicken should reach an internal temperature of 165°F.
  5. Remove the kebabs from the grill and allow them to rest for a few minutes before serving with your favorite sauces, flatbreads, or salads.
