Preparation and Cooking Steps
- Preheat the grill for indirect cooking, maintaining high heat on one side and low on another.
- In a food processor, blend mayonnaise, fresh basil leaves, lemon zest, minced garlic, salt, and pepper until smooth.
- In a food processor, pulse Castelvetrano olives and giardiniera until roughly chopped, then set aside.
- Place Italian sausages on the cooler side of the grill; cook for 8-10 minutes until internal temperature reaches 150°F.
- Move sausages to the direct heat side of the grill and char for 2-3 minutes per side until internal temperature reaches 160°F.
- Lightly spray the insides of brioche buns and toast them on the grill for about 1-2 minutes until golden.
- Assemble by placing grilled sausages in toasted buns, topping with giardiniera relish and lemon basil aioli, and serve immediately.
