Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line an 8" x 8" baking pan with parchment paper.
  2. Melt ½ cup of unsalted butter in a saucepan over low heat and then add 1 cup of light brown sugar, stirring until smooth.
  3. Mix in 2 large eggs and 1 teaspoon of vanilla extract until glossy.
  4. In a separate bowl, sift together 1¾ cups of flour and a pinch of salt, then fold it into the wet mixture.
  5. Spread the blondie batter evenly in the prepared baking pan.
  6. In another bowl, beat together 8 oz of softened cream cheese and ¼ cup of sugar until creamy, then mix in 1 egg yolk and 1 teaspoon of vanilla.
  7. Spoon the cheesecake mixture over the blondie layer and drop dollops of ½ cup of pistachio paste on top.
  8. Swirl the layers gently with a knife.
  9. Bake for 30-35 minutes or until edges are golden and center jiggles slightly.
