- Preheat your oven to 350°F (175°C) and line an 8" x 8" baking pan with parchment paper.
- Melt ½ cup of unsalted butter in a saucepan over low heat and then add 1 cup of light brown sugar, stirring until smooth.
- Mix in 2 large eggs and 1 teaspoon of vanilla extract until glossy.
- In a separate bowl, sift together 1¾ cups of flour and a pinch of salt, then fold it into the wet mixture.
- Spread the blondie batter evenly in the prepared baking pan.
- In another bowl, beat together 8 oz of softened cream cheese and ¼ cup of sugar until creamy, then mix in 1 egg yolk and 1 teaspoon of vanilla.
- Spoon the cheesecake mixture over the blondie layer and drop dollops of ½ cup of pistachio paste on top.
- Swirl the layers gently with a knife.
- Bake for 30-35 minutes or until edges are golden and center jiggles slightly.
- Cool completely in the pan, then chill in the refrigerator for at least 1 hour before slicing.
