  • 5 cups corn fresh or canned
  • 4 large eggs well beaten
  • 2 cups half and half substitutes: heavy cream or whole milk
  • 1 teaspoon kosher salt adjust to taste
  • 1/2 teaspoon white pepper substitute: black pepper
  • 1/4 teaspoon nutmeg fresh grated for best flavor
For the Topping
  • 1 cup oyster crackers or crushed saltines/panko breadcrumbs
  • 4 tablespoons butter unsalted preferred
  • 1 cup sharp cheddar cheese or Gruyère as an alternative
  • 1 teaspoon paprika for flavor and color

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C) and prepare the casserole dish.
  2. If using fresh corn, cut the kernels off the cob and scrape the liquid. For canned corn, drain five cups.
  3. Grease a 9'x9' or round casserole dish with butter or cooking spray.
  4. In a mixing bowl, combine beaten eggs, half and half, kosher salt, white pepper, and nutmeg. Mix until smooth.
  5. Fold in prepared corn and half a cup of crushed oyster crackers. Add melted butter, being careful not to overmix.
  6. Pour the mixture into the greased casserole dish and sprinkle shredded cheddar cheese on top.
  7. In a small bowl, mix remaining oyster crackers with butter and sprinkle over cheese, dusting with paprika.
  8. Bake for 45-50 minutes until the top is puffed and golden brown.
