Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C). Gather your ingredients.
  2. Generously season the chuck roast with salt, pepper, and taco seasoning.
  3. Place the seasoned roast in a Dutch oven; cover tightly.
  4. Bake for approximately 1 hour per pound, about 4 hours for a 4-pound roast.
  5. Remove roast after baking and shred with two forks.
  6. Increase temperature to 425°F (218°C) and toss shredded beef in rendered fat. Bake uncovered for 20-25 minutes.
  7. Mash avocados with lime juice, orange juice (if using), salt, and pepper. Fold in onion and cilantro.
  8. Warm tortillas using your preferred method.
  9. Assemble tacos: layer shredded beef, guacamole, onion, cilantro, and salsa on tortillas.
  10. Serve tacos family-style and enjoy!
