Ingredients
  

For the Veggie Base
  • 2 cups chopped mushrooms cremini or button mushrooms
  • 1 medium onion diced
  • 1 medium red pepper finely chopped
For the Binding
  • 1 cup cooked quinoa prepare according to package instructions
  • 2 medium potatoes diced
For Flavoring
  • 2 cloves garlic minced
  • 1 handful fresh parsley chopped
  • 1 tablespoon paprika smoked paprika optional
  • 1 dash cayenne pepper omit for milder taste
For the Crunch
  • 1 tablespoon sesame seeds or sunflower seeds
For Cooking
  • 2 tablespoons vegetable oil or olive oil
  • to taste salt
  • to taste pepper

Method
 

Cooking Steps
  1. Heat vegetable oil in a skillet over medium heat.
  2. Add diced onion and sauté for 3-4 minutes until translucent.
  3. Stir in finely chopped red pepper, cook for 2 minutes.
  4. Add chopped mushrooms, season with salt and pepper, sauté for 5-7 minutes.
  5. Boil diced potatoes in salted water for 5 minutes, then mash until smooth.
  6. In a mixing bowl, combine mashed potatoes, sautéed vegetables, and cooked quinoa.
  7. Add minced garlic, chopped parsley, sesame seeds, paprika, and cayenne pepper. Mix well.
  8. Preheat oven to 400°F (200°C) and prepare baking sheet.
  9. Form the mixture into balls and place on the baking sheet.
  10. Bake for approximately 25 minutes until golden brown.
  11. Let cool slightly before serving. Enjoy with salad or dipping sauce.
