Preparing the Bread
- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- In a bowl, whisk together flour, cocoa powder, baking soda, salt, and espresso powder.
- In a stand mixer, blend olive oil with brown and granulated sugar until smooth.
- Add eggs one at a time, mixing well after each, then incorporate vanilla and sour cream.
- Fold in the mashed bananas until well combined.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Gently fold in the chocolate chips, reserving some for topping.
- Pour the batter into the prepared loaf pan and sprinkle additional chocolate chips on top.
- Bake for 55-65 minutes, checking for doneness with a toothpick.
- Allow to cool for 20 minutes in the pan before transferring to a wire rack.
