Step-by-Step Instructions
  1. Prepare Guava Gel: In a medium saucepan, combine the guava juice and sugar over medium heat. Bring this mixture to a gentle boil, stirring occasionally. Mix cornstarch with water to create a slurry. Pour the slurry into the saucepan while stirring. Allow to thicken for about 1 minute. Refrigerate until chilled.
  2. Make Cupcakes: Preheat your oven to 350°F (175°C) and line a cupcake tin with liners. In a mixing bowl, combine the strawberry cake mix, guava juice, eggs, and coconut oil. Beat on low speed for 30 seconds, then medium speed for about 2 minutes until fluffy. Fill liners one-third full and bake for 19-22 minutes. Allow to cool completely.
  3. Make Cream Cheese Frosting: Beat softened cream cheese on medium speed until fluffy. Gradually add sugar and vanilla extract, mixing until incorporated. Fold in thawed Cool Whip with a spatula. Refrigerate until ready to assemble cupcakes.
  4. Assemble Cupcakes: Spread cream cheese frosting over each cupcake. Chill the frosted cupcakes for about 15-20 minutes to set the frosting. Spoon the guava gel on top of each cupcake. Refrigerate until ready to serve.
