- Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
- In a large mixing bowl, cream together the softened unsalted butter and powdered sugar until light and fluffy, about 3-4 minutes.
- Gradually mix in the cornstarch, all-purpose flour, and a pinch of salt. Then add the fresh lemon zest, lemon juice, and vanilla extract.
- Roll the dough into 1-inch balls and place them on the lined baking sheet, spacing them about two inches apart.
- Bake the cookies for 10 to 12 minutes until the edges are just beginning to turn golden brown.
- Cool the cookies on the baking sheet for 5 minutes, then transfer to a wire rack. Dust cooled cookies with powdered sugar.
