Method
 

Directions
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  2. In a large mixing bowl, cream together the softened unsalted butter and powdered sugar until light and fluffy, about 3-4 minutes.
  3. Gradually mix in the cornstarch, all-purpose flour, and a pinch of salt. Then add the fresh lemon zest, lemon juice, and vanilla extract.
  4. Roll the dough into 1-inch balls and place them on the lined baking sheet, spacing them about two inches apart.
  5. Bake the cookies for 10 to 12 minutes until the edges are just beginning to turn golden brown.
  6. Cool the cookies on the baking sheet for 5 minutes, then transfer to a wire rack. Dust cooled cookies with powdered sugar.
