Preparation Steps
- Rinse 1 cup of quinoa under cool running water for about 30 seconds to remove bitter saponins.
- In a large pot, combine rinsed quinoa with 2 cups of water and 1 teaspoon of garlic powder. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- Chop 1 cup each of carrots, bell pepper, cucumber, and 1/2 cup of scallions into bite-sized pieces.
- Combine the cooked quinoa with chopped veggies, 1 can of chickpeas, 1/4 cup parsley, and juice of 1 lemon.
- Season with salt and pepper, mix well, and serve.
