Ingredients
  

For the Salad
  • 1 cup quinoa Rinse the quinoa before cooking.
  • 1 can chickpeas Drained and rinsed.
  • 1 cup carrots Chopped into bite-sized pieces.
  • 1 cup bell pepper Any color, chopped.
  • 1 cup cucumber Chopped into bite-sized pieces.
  • 1/2 cup scallions Chopped.
  • 1/4 cup parsley Chopped.
For the Dressing
  • 1 lemon lemon juice Freshly squeezed.
  • 1 teaspoon garlic powder
  • to taste salt
  • to taste pepper
  • optional red pepper flakes Add for heat.

Method
 

Preparation Steps
  1. Rinse 1 cup of quinoa under cool running water for about 30 seconds to remove bitter saponins.
  2. In a large pot, combine rinsed quinoa with 2 cups of water and 1 teaspoon of garlic powder. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  3. Chop 1 cup each of carrots, bell pepper, cucumber, and 1/2 cup of scallions into bite-sized pieces.
  4. Combine the cooked quinoa with chopped veggies, 1 can of chickpeas, 1/4 cup parsley, and juice of 1 lemon.
  5. Season with salt and pepper, mix well, and serve.

Notes
