Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) if toasting oats. In a mixing bowl, combine oats and protein powder. Mix well.
  2. Stir in cashew butter until combined into a thick dough. Add honey or maple syrup and blend until sticky.
  3. Fold in blueberries and lemon zest gently to avoid smashing the blueberries.
  4. Sprinkle in chia seeds and shredded coconut, mixing thoroughly until evenly distributed.
  5. Scoop out tablespoon-sized amounts and roll into balls, placing them on a parchment-lined baking sheet.
  6. Chill in the refrigerator for at least 30 minutes to help firm up the bites.
  7. For optional lemon drizzle, combine powdered sugar and lemon juice until smooth and drizzle over bites after setting.
  8. Serve chilled or at room temperature. Store in an airtight container in the fridge.
