- Preheat your waffle iron according to the manufacturer’s instructions, usually around medium to high heat.
- In a large mixing bowl, combine the gluten-free pancake mix, flour with xanthan gum, almond milk, canola oil, and eggs. Whisk until smooth.
- Gently fold in the fresh blueberries. If making the Matcha version, add matcha powder now.
- Spray the preheated waffle iron with non-stick cooking spray.
- Using a ladle, pour the batter onto the center of the heated waffle iron.
- Cook the waffles for approximately 5 to 7 minutes, or until golden brown.
- Remove the waffles from the iron and serve immediately.
