Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, add Greek yogurt, key lime juice, powdered sweetener, vanilla extract, and lime zest. Blend until smooth.
  2. Gently fold in crushed graham crackers and toasted coconut, reserving some for topping.
  3. Line a 9x13 inch baking sheet with parchment paper. Pour the yogurt mixture and spread evenly to about 1/4 inch thick.
  4. Sprinkle reserved graham crackers and toasted coconut over the top of the yogurt mixture.
  5. Place the baking sheet in the freezer for at least 4 hours or until completely solid.
  6. Once solid, lift the bark out using parchment paper and break it into pieces.
  7. Optional: Garnish pieces with lime zest or a drizzle of honey before serving.
