- In a large mixing bowl, add Greek yogurt, key lime juice, powdered sweetener, vanilla extract, and lime zest. Blend until smooth.
- Gently fold in crushed graham crackers and toasted coconut, reserving some for topping.
- Line a 9x13 inch baking sheet with parchment paper. Pour the yogurt mixture and spread evenly to about 1/4 inch thick.
- Sprinkle reserved graham crackers and toasted coconut over the top of the yogurt mixture.
- Place the baking sheet in the freezer for at least 4 hours or until completely solid.
- Once solid, lift the bark out using parchment paper and break it into pieces.
- Optional: Garnish pieces with lime zest or a drizzle of honey before serving.
