Step-by-Step Instructions
  1. In a medium bowl, combine chia seeds, almond milk, and maple syrup. Whisk until well distributed and let sit for 5 minutes before stirring again. Cover and refrigerate for at least 2 hours.
  2. Drain and rinse soaked cashews. Add them to a blender with coconut milk, lime juice, lime zest, and maple syrup. Blend on high until smooth and creamy.
  3. Spoon a layer of chia pudding into serving jars, filling them halfway and smoothing the top.
  4. Carefully spoon the creamy layer over the chia pudding in each jar, spreading it out to create an even top layer.
  5. Cover jars and refrigerate for at least 2 more hours to allow flavors to meld and mousse to firm up.
  6. Garnish with additional lime zest or slices before serving. Enjoy your refreshing dessert straight from the jars.
