Ingredients
  

For the Chicken
  • 1 lb Boneless, Skinless Chicken Thighs
  • 2 tbsp Olive Oil substitute with avocado oil if needed
  • 1 tsp Ground Allspice can be replaced with nutmeg
  • 1 tsp Onion Powder fresh onion may be swapped
  • 1 tsp Garlic Powder substitute with fresh minced garlic (1 clove per tsp)
  • 1 tsp Sweet Paprika smoked paprika can be used
  • 1 tsp Ground Cumin coriander can be used
  • 1 tsp Turmeric Powder can be omitted if unavailable
  • 1 tsp Ground Coriander optional
  • 1 tbsp Dried Oregano fresh oregano can be used
  • 1 tsp Dried Marjoram can be replaced with thyme
  • 2 tbsp Fresh Lemon Juice lime juice can be used
For the Wraps
  • 4 pieces Pita Flatbreads or gluten-free wraps
  • 1 cup Tzatziki store-bought or homemade
  • 2 cup Sliced Tomatoes
  • 1 cup Sliced Onions
  • 0.5 cup Fresh Chopped Parsley optional

Method
 

Step-by-Step Instructions
  1. Begin by cutting the chicken thighs into strips approximately 1.5 cm thick and place in a mixing bowl.
  2. Combine olive oil, tomato paste, and ground spices in the bowl with the chicken. Mix well and marinate for about 30 minutes.
  3. Heat a cast iron skillet over high heat and add a drizzle of olive oil.
  4. Carefully add the marinated chicken to the hot skillet and let cook undisturbed for 3-4 minutes.
  5. Flip the chicken pieces, cover, and cook for another 3-4 minutes until browned.
  6. Mix a tablespoon of olive oil with the remaining tomato paste, add to the skillet and cook for a few minutes.
  7. Transfer the chicken to a serving dish, sprinkle with dried oregano, and drizzle with lemon juice. Cover for 20 minutes.
  8. Warm the pita flatbreads and serve the chicken in pita with tzatziki, sliced tomatoes, and onions. Garnish with parsley.

Notes

For best flavor, let tzatziki sit overnight. Store leftovers in the fridge for up to 3 days or freeze cooked chicken for up to 3 months.
