  1. Cream 1 cup of softened unsalted butter and 1 cup of granulated sugar in a large bowl for about 3 minutes until light and fluffy. Add 1 large egg and 1 teaspoon of pure vanilla extract, mixing until well combined. In another bowl, whisk together 2 cups of all-purpose flour, ⅓ cup of Dutch process cocoa powder, 1 teaspoon of baking powder, and ½ teaspoon of salt. Gradually incorporate the dry ingredients into the creamed mixture.
  2. Divide the dough into two equal parts, shape each into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour.
