Ingredients
  

For the Jam
  • 2 cups Fresh strawberries hulled & coarsely chopped
  • 1 cup Granulated sugar reduce for lower sugar
  • 2 tablespoons Lemon juice fresh
  • 1 each Vanilla bean or 1 tsp vanilla extract
  • 4 each Cardamom pods or ground cardamom, added later
For the Pastry
  • 1 sheet Puff pastry thawed if store-bought
For the Glaze
  • 1 cup Powdered sugar or gluten-free alternative
  • 2 tablespoons Milk or non-dairy alternative
  • 3 tablespoons Strawberry cardamom jam

Method
 

Step 1: Prepare the Jam
  1. Combine chopped strawberries, granulated sugar, lemon juice, cardamom pods, and vanilla bean in a pot. Heat until sugar dissolves, then bring to a boil for 10 minutes. Strain solids and store the jam.
Step 2: Prepare the Puff Pastry
  1. Preheat oven to 350°F. Roll out puff pastry and cut into 12 rectangles. Place half on a baking sheet and dollop jam on each. Top with remaining rectangles and seal edges.
Step 3: Bake the Tarts
  1. Bake pop tarts for 15–20 minutes until golden brown. Cool on a wire rack.
Step 4: Prepare the Glaze
  1. Whisk together powdered sugar, milk, and jam until smooth. Adjust consistency with more milk if necessary.
Step 5: Drizzle the Glaze
  1. Drizzle glaze over cooled tarts and let set before serving.
