- In a large mixing bowl, sift together the all-purpose flour, baking soda, ground nutmeg, ground cinnamon, ground cloves, and ground allspice.
- In another bowl, beat one large egg and light brown sugar together until fluffy, about 3-4 minutes. Mix in honey and unsulphured molasses until smooth.
- Gradually add the dry ingredients to the wet mixture, mixing gently with a spatula until just combined.
- Cover the dough tightly with plastic wrap and chill in the refrigerator for at least 2 hours or overnight.
