Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into uniform, bite-sized cubes about 1-inch thick.
  3. In a large mixing bowl, toss the sweet potato cubes with olive oil, salt, pepper, garlic powder, and smoked paprika.
  4. Spread the seasoned sweet potato cubes onto the prepared baking sheet and roast for 25–30 minutes, flipping halfway through.
  5. While the sweet potatoes roast, crumble the feta cheese into a mixing bowl and add half of the honey.
  6. Once the sweet potatoes are done, let them cool slightly. Top each warm cube with a dollop of the honey-feta mixture.
  7. Drizzle the remaining honey over the bites and garnish with parsley or chives.
