Herbed Potato Rolls Instructions
- Prepare the Potatoes: Peel and dice the russet potato. Boil in salted water for 15 minutes. Drain and mash, reserving ¾ cup cooking water.
- Activate the Yeast: Mix ¼ cup warm reserved potato water with sugar. Sprinkle yeast and let stand for 5 minutes until frothy.
- Mix the Dough: Combine remaining potato water, mashed potatoes, egg, melted butter, honey, herbs, and salt. Add yeast mixture and mix on low until blended.

- Shape the Rolls: Punch down dough, divide into 12 equal pieces, and shape each into a ball.
