Step-by-Step Instructions
  1. Begin by preheating your grill to medium-high heat, around 400°F.
  2. Place fresh corn on the grill and grill for 6 to 8 minutes, turning every 2 minutes until charred.
  3. Remove corn from the grill, let cool, then cut kernels off the cob and place in a mixing bowl.
  4. Add red bell pepper, jalapeño, garlic, onion, cilantro, Cotija cheese, mayonnaise, chili powder, smoked paprika, salt, and lime juice to the bowl. Mix gently.
  5. Cover and chill in the refrigerator for at least 30 minutes before serving.
