Cooking Steps
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine chicken thighs, olive oil, honey Dijon mustard, minced garlic, salt, lemon zest, and dry oregano. Marinate for at least 1 hour or overnight.
  3. Prepare your cooking setup: If using a Vertical Gyro Spit Plate, thread the marinated chicken onto the skewer. For a homemade method, use a halved onion to hold the skewers.
  4. Place the gyro spit in the oven and pour water or stock into the baking sheet to maintain moisture.
  5. Cover the chicken with foil if desired, and bake for 75-90 minutes until golden brown and internal temperature reaches 165°F (74°C).
  6. After baking, let the chicken rest for 10 minutes before slicing against the grain into thin strips.
