Cooking Steps
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine chicken thighs, olive oil, honey Dijon mustard, minced garlic, salt, lemon zest, and dry oregano. Marinate for at least 1 hour or overnight.
- Prepare your cooking setup: If using a Vertical Gyro Spit Plate, thread the marinated chicken onto the skewer. For a homemade method, use a halved onion to hold the skewers.
- Place the gyro spit in the oven and pour water or stock into the baking sheet to maintain moisture.
- Cover the chicken with foil if desired, and bake for 75-90 minutes until golden brown and internal temperature reaches 165°F (74°C).
- After baking, let the chicken rest for 10 minutes before slicing against the grain into thin strips.
