  • 1 cup Dairy-Free Milk Unsweetened soy or almond milk work best.
  • 1/4 cup Olive Oil Substitute with any neutral oil.
  • 1 tbsp Apple Cider Vinegar Can be replaced with lemon juice.
For the Vegetables
  • 1 cup Grated Zucchini Can be swapped with grated carrot.
  • 1 cup Grated Carrot Interchange with zucchini if desired.
  • 1 cup Red Capsicum Can be omitted or replaced with other veggies.
  • 1 cup Baby Spinach Kale can be used or omitted.
For Garnish
  • 1/4 cup Pumpkin Seeds Optional for decoration and crunch.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and prepare the muffin tray.
  2. In a mixing bowl, whisk together all the dry ingredients well.
  3. Create a well in the dry mixture and add the wet ingredients and vegetables. Mix gently.
  4. Fill each muffin cup almost to the top with the batter.
  5. If desired, sprinkle pumpkin seeds on top for garnish.
  6. Bake in the preheated oven for 30-35 minutes.
  7. Allow to cool in the tray for 5 minutes before transferring to a wire rack.
