Step-by-Step Instructions
  1. Cut a ripe dragon fruit in half and scoop out the flesh into a mixing jar. Add the fresh lime juice and mint leaves. Muddle gently for about 30 seconds.
  2. Fill four tall glasses with crushed ice to the brim.
  3. Pour the muddled dragon fruit mixture evenly over the crushed ice in each glass, leaving room for fizz.
  4. Pour sparkling water into each glass, stir gently, and watch the vibrant color combine with the bubbles.
  5. Garnish each Mojito with mint leaves and a slice of dragon fruit. Serve immediately.
