Ingredients
  

For the Cookie Dough
  • 1/2 cup Salted Butter Softened
  • 1 cup Granulated Sugar
  • 2 large Eggs
  • 1 teaspoon Cake Batter Flavoring Or vanilla extract as alternative
  • several drops Pink Food Coloring Or beet powder for natural coloring
  • 2 1/2 cups All-Purpose Flour Gluten-free flour can be used
  • 2 teaspoons Baking Powder
For the Cream Cheese Frosting
  • 1/2 cup Butter Softened
  • 8 ounces Cream Cheese Softened
  • 1 teaspoon Vanilla Extract Optional
  • 3-4 cups Powdered Sugar Use to taste for sweetness
  • pinch Salt
  • to taste Milk or Heavy Cream For thinning the frosting
  • to taste Christmas Sprinkles Optional for decoration

Method
 

Cookie Instructions
  1. Preheat your oven to 350°F (180°C) and line baking sheets with parchment paper.
  2. Cream together ½ cup of salted butter and 1 cup of granulated sugar until light and fluffy.
  3. Add 2 large eggs, 1 teaspoon of cake batter flavoring, and several drops of pink food coloring; mix until combined.
  4. Gradually mix in 2 ½ cups of all-purpose flour and 2 teaspoons of baking powder until a soft dough forms.
  5. Scoop 3-tablespoon portions of dough and roll into balls; flatten slightly on baking sheets spaced 2 inches apart.
  6. Bake for 9-11 minutes until edges are set and centers puff slightly; let cool on sheets for a few minutes.
  7. Prepare frosting by mixing together ½ cup of butter, 8 ounces of cream cheese, and 1 teaspoon of vanilla.
  8. Blend in 3-4 cups of powdered sugar, adding milk to reach desired consistency.
  9. Frost cookies once cooled and add Christmas sprinkles immediately after.
