  • 1 cup Carrots Chopped or shredded.
  • 1 cup Purple Cabbage Chopped.
  • 1/4 cup Avocado Cilantro Dressing Or Green Chutney.
  • 1 cup Yogurt Strained over night.
  • 1 pinch Salt To taste.
  • 1 pinch Black Pepper Freshly cracked, to taste.
  • 1/4 cup Herbs Mint, Dill, Parsley, or Basil.

Method
 

Step-by-Step Instructions
  1. Strain 1 cup of yogurt in a cheesecloth or fine mesh sieve overnight in the refrigerator.
  2. Finely chop or shred 1 cup of carrots and 1 cup of purple cabbage.
  3. In a large bowl, mix the strained yogurt with the chopped vegetables, salt, pepper, and herbs.
  4. Take two slices of whole grain bread and spread a layer of the vegetable filling on one slice, top with dressing, and close with another slice.
  5. Cut each sandwich diagonally into halves or quarters and cover with wax paper and a damp towel until serving.
