- Heat the peanut oil in a large skillet over high heat until it shimmers, about 1-2 minutes.
- Add the diced yellow onion and char siu pork, stir-frying for 1-2 minutes until the onion is translucent.
- Incorporate the white parts of the green onions, minced ginger, and garlic. Stir for 30 seconds.
- Introduce the leftover rice, breaking it apart and stir for about 2 minutes until heated through.
- Mix in the XO sauce until all rice is evenly coated, stirring for another 1-2 minutes.
- Push the rice mixture aside, add more oil if needed, and scramble the beaten eggs for 20-30 seconds.
- Fold the scrambled eggs into the rice mixture and add the remaining green onions, cooking for another 30 seconds.
- Taste and adjust seasoning with salt before serving hot.
