  • 1 tablespoon ginger fresh gives the best flavor
  • 2 cloves garlic avoid garlic powder for best results
  • 3 tablespoons XO sauce homemade is best, ensure gluten-free if store-bought

Method
 

Cooking Steps
  1. Heat the peanut oil in a large skillet over high heat until it shimmers, about 1-2 minutes.
  2. Add the diced yellow onion and char siu pork, stir-frying for 1-2 minutes until the onion is translucent.
  3. Incorporate the white parts of the green onions, minced ginger, and garlic. Stir for 30 seconds.
  4. Introduce the leftover rice, breaking it apart and stir for about 2 minutes until heated through.
  5. Mix in the XO sauce until all rice is evenly coated, stirring for another 1-2 minutes.
  6. Push the rice mixture aside, add more oil if needed, and scramble the beaten eggs for 20-30 seconds.
  7. Fold the scrambled eggs into the rice mixture and add the remaining green onions, cooking for another 30 seconds.
  8. Taste and adjust seasoning with salt before serving hot.
