- Heat the Peanut Oil: Begin by heating 1 tablespoon of peanut oil in a large skillet or wok over high heat. Once the oil shimmers, add in 1 diced yellow onion. Sauté for about 1 to 2 minutes, until the onion is golden brown and caramelized.
- Sauté Aromatics: Next, stir in the white parts of 2 green onions, 1 tablespoon of freshly grated ginger, and 2 minced garlic cloves. Sauté these ingredients for about 30 seconds.
- Incorporate the Rice: Add 4 cups of cold, leftover rice to the skillet, breaking up any clumps and stirring well. Cook for 2 minutes.
- Mix in XO Sauce: Pour in about 3 tablespoons of XO sauce over the rice. Stir thoroughly for another 1 to 2 minutes.
- Add Scrambled Eggs: Push the fried rice to one side of the skillet. Drizzle in another tablespoon of oil and add 2 lightly beaten eggs to that space.
- Combine Everything: Carefully fold the scrambled eggs into the fried rice. Add the remaining green onion greens for a fresh finish.
