For the Herbs and Sauce
  • 1 teaspoon Dried Oregano or 3x fresh
  • 1 teaspoon Dried Basil or 3x fresh
  • 24 ounces Marinara Sauce store-bought or homemade
  • 1 cup Water or Chicken Broth or vegetable broth for a vegetarian option
For the Noodles and Cheese
  • 8 pieces Lasagna Noodles broken into pieces, gluten-free if needed
  • 1 cup Whole Milk Cottage Cheese or ricotta cheese
  • 2 cups Shredded Whole Milk Mozzarella or any low-moisture mozzarella
  • 1/2 cup Grated Parmesan or pecorino cheese
For Seasoning
  • to taste Kosher Salt or sea salt
  • to taste Black Pepper or pepper blend

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet. Add 1 pound each of ground sirloin and Italian sausage; cook until browned.
  2. Stir in 1 diced onion, 3 minced garlic cloves, 1 teaspoon each of red pepper flakes, oregano, and basil. Cook for an additional 3-4 minutes.
  3. Pour in 24 ounces of marinara and 1 cup of water or broth. Bring to a simmer, then add 8 broken lasagna noodles, season with salt and pepper.
  4. Cover and simmer for 15 minutes until noodles are tender.
  5. In a separate bowl, mix 1 cup of cottage cheese, 2 cups of mozzarella, and 1/2 cup of Parmesan. Season with salt and pepper.
  6. Dollop the cheese mixture over the noodles, then bake in a preheated oven at 400°F for 25-30 minutes until bubbly.
  7. Let it rest for 10 minutes before serving. Garnish with fresh basil leaves.
