- Preheat your oven to 350°F (175°C). Gather your ingredients and ensure your pie crust is ready.
- In a large mixing bowl, mix the pumpkin puree, mascarpone cheese, brown sugar, pumpkin pie spice, vanilla extract, lemon juice, eggs, and salt until well blended and smooth, about 3-4 minutes.
- Place your prepared pie crust in a 9-inch pie dish and gently press it evenly against the bottom and sides of the dish.
- Pour the filling into the prepared crust, ensuring it fills evenly and smooth the top if needed.
- Bake the pie in the preheated oven for about 55–60 minutes until the center is slightly jiggly but set.
- Remove from the oven and cool on a wire rack for at least 30 minutes. Refrigerate for a few hours or overnight to let flavors meld.
- Serve slices on their own or topped with whipped cream or crème fraîche.
