  • 1 tsp Vanilla Extract Use pure extract for best flavor
  • 2 tbsp Fresh Lemon Juice Bottled can also be used
  • 3 large Eggs Room temperature
  • 1/2 tsp Salt A pinch enhances sweetness
  • 1 9-inch Pie Crust Homemade or store-bought, thawed if frozen

Method
 

Directions
  1. Preheat your oven to 350°F (175°C). Gather your ingredients and ensure your pie crust is ready.
  2. In a large mixing bowl, mix the pumpkin puree, mascarpone cheese, brown sugar, pumpkin pie spice, vanilla extract, lemon juice, eggs, and salt until well blended and smooth, about 3-4 minutes.
  3. Place your prepared pie crust in a 9-inch pie dish and gently press it evenly against the bottom and sides of the dish.
  4. Pour the filling into the prepared crust, ensuring it fills evenly and smooth the top if needed.
  5. Bake the pie in the preheated oven for about 55–60 minutes until the center is slightly jiggly but set.
  6. Remove from the oven and cool on a wire rack for at least 30 minutes. Refrigerate for a few hours or overnight to let flavors meld.
  7. Serve slices on their own or topped with whipped cream or crème fraîche.
