Preparation Steps
  1. In a food processor, combine the defrosted frozen peas, optional pea shoots, grated parmesan, olive oil, freshly squeezed lemon juice, and a pinch of salt and black pepper. Pulse until it forms a rough paste.
  2. Preheat your broiler to high. Slice the ciabatta into thick pieces and drizzle with olive oil. Toast under the broiler for 2-3 minutes, flipping halfway through.
  3. Rub a halved clove of garlic across the surface of each toasted slice while still warm.
  4. Spread the creamy pea topping onto each toasted ciabatta slice, sprinkle additional grated parmesan, lemon zest, and pea shoots on top, then drizzle with olive oil and finish with black pepper.
