Step-by-Step Instructions for Passionfruit Slice
  1. Preheat your oven to 180°C (350°F). Line an 8-inch square baking tin with parchment paper.
  2. Combine melted unsalted butter, desiccated coconut, caster sugar, and plain flour in a mixing bowl.
  3. Transfer the mixture into the lined baking tin, pressing it firmly and evenly across the base. Bake for 15 minutes until edges are golden, then cool completely.
  4. Whisk together sweetened condensed milk, fresh lemon juice, and strained passionfruit pulp until smooth.
  5. Soften powdered gelatine in cold water. Heat some strained passionfruit pulp in a saucepan, then dissolve the gelatine in it.
  6. Combine dissolved gelatine mixture with the passionfruit filling, pour over the base, and refrigerate for about 2 hours.
