  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 1 cup Rice uncooked
  • 2 Carrots sliced
  • 3 cups Chicken Broth vegetable broth works for vegetarian
For the Seasoning
  • 1/4 teaspoon Dried Thyme or fresh thyme
  • 1/2 teaspoon Salt to taste
  • 1/4 teaspoon Pepper to taste
For the Creaminess
  • 1/2 cup Unsweetened Almond Milk or oat/coconut milk
For Garnish
  • Fresh Parsley

Step-by-Step Instructions
  1. In a large pot, heat 1 tablespoon of olive oil over medium-high heat. Add 1 pound of diced chicken. Sauté until golden brown and cooked through, about 5-6 minutes.
  2. Add 1 medium diced onion to the pot and cook for 2-3 minutes until softened. Stir in 2 minced garlic cloves for an additional 30 seconds.
  3. Mix in 1 cup of uncooked rice and 2 sliced carrots. Pour in 3 cups of chicken broth, add 1/4 teaspoon dried thyme, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
  4. Cover the pot, reduce heat to low, and simmer for 18-20 minutes, stirring occasionally.
  5. Once the rice is cooked, pour in 1/2 cup of unsweetened almond milk and stir. Simmer uncovered for another 3-4 minutes.
  6. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
