- Preheat your oven to 350°F (175°C). Gather ingredients and prep your workspace.
- Pat the chicken thighs dry with paper towels and season with salt and pepper.
- Heat olive oil in a Dutch oven over medium heat. Sear chicken thighs skin-side down for 4-5 minutes.
- Flip chicken and sear the other side for about 2 minutes. Set chicken aside.
- In a mixing bowl, whisk together Catalina dressing ingredients until smooth.
- Pour half the sauce into the Dutch oven, nestle the chicken in, and drizzle remaining sauce over it.
- Cover and bake for 45 minutes. Uncover and bake for an additional 20-25 minutes.
- Remove from oven, drizzle extra sauce over chicken, and garnish with parsley before serving.
