Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather ingredients and prep your workspace.
  2. Pat the chicken thighs dry with paper towels and season with salt and pepper.
  3. Heat olive oil in a Dutch oven over medium heat. Sear chicken thighs skin-side down for 4-5 minutes.
  4. Flip chicken and sear the other side for about 2 minutes. Set chicken aside.
  5. In a mixing bowl, whisk together Catalina dressing ingredients until smooth.
  6. Pour half the sauce into the Dutch oven, nestle the chicken in, and drizzle remaining sauce over it.
  7. Cover and bake for 45 minutes. Uncover and bake for an additional 20-25 minutes.
  8. Remove from oven, drizzle extra sauce over chicken, and garnish with parsley before serving.
