Step-by-Step Instructions

  2. Squeeze the grated zucchini through a clean towel to remove excess liquid.
  3. Combine drained zucchini with Parmesan cheese, flour, egg, green onions, garlic powder, and black pepper. Mix well.
  4. Heat a non-stick skillet over medium heat and coat with olive or avocado oil.
  5. Scoop and flatten 2-3 tablespoons of zucchini mixture into a patty and cook for 3-4 minutes until golden brown.
  6. Flip and cook the other side until golden, then transfer to paper towel-lined plate to absorb excess oil.
