Method
 

Step-by-Step Instructions
  1. In a mixing bowl, toss the cleaned and deveined prawns with soy sauce, fish sauce, and white wine vinegar. Let marinate for about 15 minutes, turning occasionally.
  2. In a separate bowl, whisk together the all-purpose flour, corn flour, salt, and baking powder. Gradually add ice-cold water while stirring until smooth.
  3. Dip each prawn into the batter, allowing excess to drip off. Roll in panko breadcrumbs for an even coating.
  4. In a deep pan, heat oil to 350°F (175°C). Add coated prawns in small batches, frying for 1-2 minutes until golden brown.
  5. Place fried prawns on paper towels to drain excess oil. Serve immediately with your favorite dipping sauce.
