- Preheat your oven to 220°C (428°F) in a fan-forced setting. Lightly spray muffin cups with olive oil.
- Place five frozen potato gems into each muffin cup. Bake for approximately 10 minutes until they start to crisp.
- Sprinkle grated cheddar cheese into each potato well. Return to oven and bake for another 15 minutes until cheese is melted.
- Remove the tray and spoon dollops of ricotta cheese into each cup. Add strips of prosciutto and diced cherry tomatoes.
- Garnish with microgreens or baby rocket and freshly cracked pepper. Serve immediately.
