  • 1 teaspoon Smoked Paprika Regular paprika can be used for a milder flavor.
  • 1 teaspoon Pepper Freshly cracked black pepper or white pepper.
For the Sardines
  • 4 whole Sardines (Split open, Butterflied) Fresh or high-quality canned sardines work well.
For Frying
  • 1 cup Extra Virgin Olive Oil Can substitute with another vegetable oil if desired.
For Garnishing
  • 2 pieces Lemon Wedges No substitutes required.
  • 1 tablespoon Parsley Chopped for easy sprinkling.

Method
 

Instructions
  1. Prepare the Coating Mixture by combining plain flour, rock salt, toasted garlic salt, smoked paprika, and freshly cracked pepper in a bag or dish.
  2. Coat the Sardines by adding them to the mixture, sealing, and shaking gently to coat evenly.
  3. Heat the Olive Oil in a large frying pan over medium heat until it shimmers.
  4. Fry the Sardines skin-side down for 1-2 minutes, then flip and fry for another 1-2 minutes.
  5. Drain Excess Oil by transferring the sardines to a plate lined with paper towels.
  6. Garnish and Serve by arranging sardines on a platter with chopped parsley and lemon wedges.
