- Wash the fresh spinach thoroughly and chop into small pieces if using fresh. If using frozen, thaw it and squeeze out excess moisture.
- In a large bowl, combine the spinach, feta, mozzarella, and beaten egg. Season with salt and pepper, and add optional herbs or spices. Mix until well combined.
- Line a baking sheet with parchment paper and shape the mixture into small mounds on it, ensuring space between each.
