- Start by peeling the ripe plantains, and cut them into bite-sized chunks.
- In a mixing bowl, combine plantain chunks with grated ginger, cayenne pepper, cloves, nutmeg, and salt. Toss until well-coated and let sit for 15-20 minutes.
- Heat oil in a deep fryer or pot to 350°F (175°C).
- Carefully drop marinated plantains into hot oil in small batches and fry for about 5-7 minutes until golden brown.
