For the Kelewele
  • 2 medium ripe plantains Choose those with yellow skin and black spots for best sweetness.
  • 2 tbsp fresh ginger Grated; ground ginger can be used as a substitute.
  • 1 tsp cayenne pepper For heat; consider smoked paprika for a milder option.
  • 1/4 tsp cloves Optional.
  • 1/4 tsp nutmeg Optional but recommended for flavor.
  • 1 tsp salt Adjust to taste.
  • oil for frying Coconut oil is recommended for flavor.

Method
 

Preparation Steps
  1. Start by peeling the ripe plantains, and cut them into bite-sized chunks.
  2. In a mixing bowl, combine plantain chunks with grated ginger, cayenne pepper, cloves, nutmeg, and salt. Toss until well-coated and let sit for 15-20 minutes.
  3. Heat oil in a deep fryer or pot to 350°F (175°C).
  4. Carefully drop marinated plantains into hot oil in small batches and fry for about 5-7 minutes until golden brown.
  5. Remove the fried plantains with a slotted spoon and drain on a paper towel.
  6. Serve warm as a snack or appetizer.
